Ingredients

2 slices of whole grain or sourdough bread

2 large eggs

2 slices of crispy bacon

1 avocado, sliced

2 slices of tomato

1 handful of fresh spinach or arugula

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

Salt and pepper to taste

Olive oil for frying

Instructions

Prepare the Ingredients: Start by gathering all your ingredients. Slice the avocado and tomato, and wash the spinach or arugula.

Cook the Bacon: In a skillet over medium heat, cook the bacon slices until crispy (about 5-7 minutes). Remove and let them drain on paper towels.

Fry the Eggs: In the same skillet with a bit of bacon grease, crack the eggs and cook to your liking (sunny-side up or scrambled works well). Season with salt and pepper.

Toast the Bread: While the eggs are cooking, toast the slices of bread until golden brown. You can also brush them lightly with olive oil for added flavor.

Assemble the Sandwich: Spread the mayonnaise on one slice of toast and the Dijon mustard on the other. On the mayo side, layer the spinach/arugula, then the crispy bacon, followed by the tomato slices. Top this with the fried egg and avocado slices.

Finish It Off: Close the sandwich with the second slice of toast (Dijon side down). If desired, you can press down gently to compact the sandwich before slicing it in half.

Serve: Enjoy the sandwich immediately while warm, or secure it with toothpicks if you plan on serving it later.
