2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup milk

1/4 cup Greek yogurt

1/4 cup melted butter

2 large eggs

1 cup cooked and crumbled breakfast sausage

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped green onions

1 teaspoon garlic powder

Pepper to taste

Instructions

Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.

In a large mixing bowl, combine the flour, baking powder, and salt.

In another bowl, whisk together the milk, Greek yogurt, melted butter, and eggs until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Fold in the cooked sausage, shredded cheddar cheese, diced bell peppers, green onions, garlic powder, and pepper. Mix until evenly distributed.

Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.

Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Allow the Breakfast Bombs to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
