4 bone-in pork chops (about 1 inch thick)

8 oz Boursin cheese (garlic and fine herbs flavor)

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a small bowl, mix together the olive oil, Dijon mustard, garlic powder, thyme, salt, and pepper.

    Marinate the Pork Chops: Rub the marinade all over the pork chops. Make sure they are evenly coated. Let them marinate for at least 30 minutes (or up to 2 hours) in the refrigerator to enhance the flavor.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Pan-Sear the Chops: Heat a large oven-safe skillet over medium-high heat. Add the marinated pork chops and sear them for 3-4 minutes on each side until they are golden brown.

          Prepare the Boursin Topping: Once the pork chops are seared, remove the skillet from heat. Take the Boursin cheese and spread an even layer on top of each pork chop.

            Bake in the Oven: Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and the cheese is bubbly.

              Serve: Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley before serving.
