1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 tbsp olive oil

1/4 cup bourbon (or whiskey)

1/2 cup soy sauce (low sodium preferred)

1/4 cup brown sugar

2 cloves garlic, minced

1 tsp fresh ginger, grated

1/2 tsp black pepper

1/4 tsp red pepper flakes (adjust for spice preference)

1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish, optional)

Instructions
 

Prep the Chicken: In a medium bowl, season the chicken pieces with black pepper and red pepper flakes. Set aside.

    Sauté Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Create Sauce: In the same skillet, reduce heat to medium and add minced garlic and grated ginger. Sauté for about 1 minute until fragrant. Pour in the bourbon, scraping the bottom of the skillet to deglaze, followed by soy sauce and brown sugar. Stir until the sugar is dissolved.

        Combine and Simmer: Return the chicken to the skillet. Stir to coat the chicken in the sauce. Bring to a gentle simmer, cover, and cook for 10-15 minutes, allowing the chicken to absorb the flavors.

          Thicken Sauce: Uncover the skillet and add the cornstarch mixture. Stir well and cook for an additional 2-3 minutes, or until the sauce thickens to your desired consistency.

            Serve: Remove from heat and garnish with sliced green onions and sesame seeds if desired. Serve over steamed rice or with vegetables.
