Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup fresh or frozen blueberries

2 tablespoons cornstarch (for thickening the blueberry filling)

1 tablespoon lemon juice (for added flavor)

1 tablespoon milk (for brushing)

Extra granulated sugar for sprinkling

Instructions

Prepare the Blueberry Filling: In a small saucepan over medium heat, combine the blueberries, cornstarch, lemon juice, and 1 tablespoon of granulated sugar. Cook until the mixture starts to thicken and bubble, about 5-7 minutes. Remove from heat and let it cool while you prepare the cookie dough.

Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, then stir in the vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet mixture, mixing until just combined.

Incorporate the Blueberries: Gently fold in the cooled blueberry filling until evenly distributed throughout the dough. The dough will be slightly sticky, which is fine!

Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This will make it easier to handle.

Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

Shape the Cookies: Using a cookie scoop or tablespoon, drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Press down slightly to flatten each cookie. Brush the tops with a little milk and sprinkle with extra granulated sugar for a sweet crunch.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will look soft but will firm up as they cool.

Cool and Serve: Let the cookies cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely. Enjoy your blueberry pie cookies with a glass of milk or a scoop of ice cream!
