Ingredients

2 cups all-purpose flour

1 cup fresh blueberries (or frozen, if out of season)

1/2 cup cream cheese, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted

2 large eggs

1/2 cup milk

1 tablespoon vanilla extract

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Zest of 1 lemon

Optional: coarse sugar for topping

Instructions

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them lightly.

In a medium bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Set aside.

In a large mixing bowl, combine melted butter, granulated sugar, brown sugar, eggs, milk, and vanilla extract. Whisk together until well combined.

In another bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest.

Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Fold in the blueberries, ensuring they are evenly distributed through the batter.

Scoop a tablespoon of muffin batter into each muffin cup, then add a dollop of the cream cheese mixture on top of the batter in each muffin cup. Finally, spoon a little more batter on top to cover the cream cheese.

If desired, sprinkle a pinch of coarse sugar on top of each muffin for an added crunch and sweetness.

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
