Blueberry Cream Cheese Muffins

Ingredients
  

1 cup fresh or frozen blueberries

8 oz cream cheese, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup milk

1/4 cup chopped walnuts (optional)

Zest of 1 lemon (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a mixing bowl, beat together the softened cream cheese, granulated sugar, and brown sugar until smooth and creamy. Set aside.

      In another bowl, whisk together the melted butter, eggs, vanilla extract, and milk until well combined.

        In a third bowl, mix the flour, baking powder, baking soda, salt, and lemon zest (if using). Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Do not overmix.

          Gently fold in the blueberries and walnuts (if using) into the batter to evenly distribute them.

            Spoon a tablespoon of the muffin batter into each muffin cup, creating a small well in the center. Add a dollop (about a teaspoon) of the cream cheese mixture into the well, then cover with more muffin batter until the cups are about 3/4 full.

              Bake in the preheated oven for 20-25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

                Remove from the oven and allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
