The blackened salmon recipe shines with simple yet bold flavors. First, you need salmon fillets. I recommend four fillets, each about six ounces. The fish should be fresh for the best taste. Next, gather your spices. You will use smoked paprika, garlic powder, onion powder, cayenne pepper, and dried thyme. These spices create the signature blackened crust.

Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

1 teaspoon dried thyme

Salt and black pepper to taste

1 ripe avocado, diced

1 cup corn (fresh or canned)

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, seeded and minced

2 tablespoons lime juice

2 tablespoons fresh cilantro, chopped

Instructions

Prepare the spice mix: In a small bowl, combine the smoked paprika, garlic powder, onion powder, cayenne pepper, dried thyme, salt, and black pepper. Mix well to create the blackened seasoning.

Season the salmon: Pat the salmon fillets dry with paper towels. Rub both sides of each fillet with olive oil, then generously coat with the blackened seasoning, ensuring full coverage.

Cook the salmon: Heat a large skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the seasoned salmon fillets to the pan. Cook for 3-4 minutes on each side, or until a blackened crust forms and the salmon is cooked to your desired doneness. (It should flake easily with a fork.)

Make the avocado corn salsa: In a mixing bowl, gently combine the diced avocado, corn, red bell pepper, red onion, jalapeño, lime juice, and cilantro. Season with salt and pepper to taste.

Serve: Place the blackened salmon fillets on a plate and generously top with the avocado corn salsa.

            Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

              - Presentation Tips: Serve the salmon on a bed of mixed greens or alongside a wedge of lime for added color. Consider drizzling with a little olive oil and adding a sprig of cilantro on top for a fresh finish.
