4 salmon fillets (6 oz each)

1 cup fresh spinach, chopped

½ cup Parmesan cheese, grated

1 clove garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon cayenne pepper

½ teaspoon dried thyme

Salt and pepper to taste

Lemon wedges for serving

Preheat the oven to 375°F (190°C).

    Prepare the filling: In a medium skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and cook until wilted, approximately 2-3 minutes. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste. Set aside to cool slightly.

      Prepare the salmon: Place the salmon fillets skin-side down on a cutting board. Using a sharp knife, carefully slice each fillet lengthwise to create a pocket without cutting all the way through.

        Stuff the salmon: Spoon the spinach and Parmesan mixture evenly into each salmon fillet pocket.

          Season the salmon: In a small bowl, mix the smoked paprika, cayenne pepper, dried thyme, salt, and pepper. Rub this spice mixture generously over the top of each stuffed salmon fillet, ensuring even coverage.

            Blacken the salmon: Place a cast-iron skillet or oven-safe pan over medium-high heat. Once it’s hot, add the stuffed salmon fillets, skin-side down, and sear for 2-3 minutes until the skin is crisp.

              Finish cooking in the oven: Carefully transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, until the salmon is cooked through and flakes easily with a fork.

                Serve: Remove the skillet from the oven. Serve the blackened salmon bundles with lemon wedges on the side for squeezing over the top.
