4 salmon fillets, skinless

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/2 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Prepare the Filling: In a medium bowl, combine the chopped spinach, cream cheese, grated Parmesan, minced garlic, salt, pepper, and thyme. Mix until well combined and set aside.

    Prepare the Salmon: Preheat your oven to 375°F (190°C). Pat the salmon fillets dry with a paper towel. Using a sharp knife, make a pocket in each salmon fillet by cutting along the long side, being careful not to cut all the way through.
