Ingredients

4 salmon fillets (6 oz each)

2 cups fresh spinach, chopped

1 cup cream cheese, softened

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

Lemon wedges for serving

Instructions

Preheat your oven to 375°F (190°C).

In a skillet, heat the olive oil over medium heat. Add the minced garlic and chopped spinach. Sauté until the spinach is wilted, about 3-4 minutes. Remove from heat.

In a mixing bowl, combine the sautéed spinach, cream cheese, and grated Parmesan cheese. Mix until smooth and well combined. Season with salt and black pepper to taste.

Take the salmon fillets and carefully create a pocket in each by slicing through the side, being careful not to cut all the way through.

Stuff each pocket with the creamy spinach and Parmesan mixture, pressing down slightly to secure the filling inside.

In a small bowl, mix together the smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub this spice blend generously over the outside of each stuffed salmon fillet.

Place the stuffed salmon on a baking sheet lined with parchment paper or greased lightly with olive oil.

Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

For an added touch, you can broil the salmon for an additional 2-3 minutes at the end to create a beautiful charred finish.

                    Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

                      - Presentation Tips: Serve the blackened salmon on a bed of sautéed greens or quinoa. Garnish with fresh lemon wedges and a sprinkle of additional grated Parmesan for an elegant touch.
