1 pound pork tenderloin, cut into bite-sized cubes

2 tablespoons olive oil

1 tablespoon smoked paprika

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon brown sugar

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a small bowl, combine the smoked paprika, cayenne pepper, garlic powder, onion powder, dried thyme, brown sugar, salt, and pepper. Mix well to create a spice blend.

    Pat the pork cubes dry with paper towels to help achieve a good sear.

      In a large mixing bowl, toss the pork cubes with olive oil, ensuring they're well-coated. Then evenly sprinkle the spice blend over the pork and toss again until all pieces are thoroughly coated.

        Preheat a large skillet or grill pan over medium-high heat. Once hot, add the seasoned pork cubes in a single layer (you may need to do this in batches to avoid overcrowding).
