1/4 cup all-purpose flour

2 tablespoons granulated sugar

1/4 teaspoon baking powder

1/4 teaspoon baking soda

A pinch of salt

2 tablespoons milk

1 tablespoon vegetable oil

1/4 teaspoon vanilla extract

1/4 cup fresh blackberries (plus extra for topping)

Optional: powdered sugar for dusting

In a microwave-safe mug, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Stir until well mixed.

    Add in the milk, vegetable oil, and vanilla extract into the dry ingredients. Mix until smooth and there are no lumps.

      Gently fold in the blackberries, making sure to distribute them evenly into the batter.

        Microwave the mug cake on high for about 1 minute and 30 seconds. Start checking at 1 minute; if the cake is not set in the middle, continue to cook in 15-second intervals until done. The cake should be firm and spring back when touched.

          Remove the mug from the microwave (it will be hot!) and let it cool for a couple of minutes.

            If desired, dust with powdered sugar and top with extra blackberries before serving.
