Blackberry Balsamic and Brie Grilled Cheese - Rhubarb & Lavender

Ingredients
  

4 slices of sourdough bread

8 ounces Brie cheese, sliced

1 cup fresh blackberries

2 tablespoons balsamic glaze

1 tablespoon honey

1/2 cup rhubarb, chopped

1 teaspoon dried lavender buds

1 tablespoon unsalted butter

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

In a small saucepan, combine the chopped rhubarb, honey, and a pinch of salt. Cook over medium heat until the rhubarb has softened and is beginning to break down, about 5-7 minutes.

    Stir in the dried lavender buds and cook for an additional minute. Remove from heat and allow to cool slightly. This will be your rhubarb-lavender compote.

      Spread a thin layer of butter on one side of each slice of sourdough bread.

        On the unbuttered side of two slices, layer the Brie cheese slices evenly.

          Scatter the fresh blackberries over the Brie, then drizzle with balsamic glaze.

            Spread a generous spoonful of the rhubarb-lavender compote on top of the blackberries, and season with a touch of salt and pepper for balance.

              Top with the remaining slices of bread, buttered side facing out.

                Heat a skillet over medium heat. Once hot, place the sandwiches in the skillet. Cook each side until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

                  Remove the sandwiches from the skillet, slice in half, and serve warm.
