Blackberry Balsamic and Brie Grilled Cheese

2 slices of sourdough bread

100g Brie cheese, sliced

1/4 cup fresh blackberries

2 tablespoons balsamic glaze

1 tablespoon unsalted butter

A pinch of salt and black pepper

Fresh basil leaves (optional, for garnish)

Instructions
 

In a small bowl, mash the blackberries with a fork until slightly crushed, then stir in the balsamic glaze. Set aside.

    Heat a nonstick skillet over medium-low heat. While the skillet is warming, butter one side of each slice of sourdough bread.

      Place one slice of bread, butter side down, onto the skillet.

        On top of the bread, layer the Brie cheese evenly, then spread the blackberry-balsamic mixture over the Brie.

          Season with a pinch of salt and black pepper, and if desired, add a few fresh basil leaves on top for extra flavor.

            Place the second slice of bread on top, butter side up.

              Cook for 3-4 minutes, or until the bottom slice is golden brown and the cheese begins to melt. Carefully flip the sandwich using a spatula and cook the other side for another 3-4 minutes until golden brown.

                Once both sides are crispy and the cheese is melting, remove the sandwich from the skillet and let it cool for a minute before slicing.
