1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper (freshly ground for best flavor)

1 teaspoon salt

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil

4 cloves garlic, minced

1 inch piece ginger, minced

1 bell pepper (red or green), sliced

1 cup snow peas or sugar snap peas

3 green onions, chopped

Cooked steamed rice for serving

Marinate the Chicken: In a large bowl, combine chicken pieces, black pepper, salt, soy sauce, oyster sauce, and cornstarch. Mix well to ensure all chicken pieces are coated. Let it marinate for at least 30 minutes to infuse the flavors.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Ensure the oil is hot but not smoking.

      Cook the Chicken: Add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes or until the chicken is golden brown and cooked through, stirring occasionally. Remove the chicken from the pan and set aside.

        Sauté Aromatics: In the same skillet, add more oil if needed and toss in the minced garlic and ginger. Sauté for about 30 seconds until fragrant.

          Add Vegetables: Add the sliced bell pepper and snow peas to the skillet. Stir-fry for another 3-4 minutes until the vegetables are crisp-tender.

            Combine and Finish: Return the cooked chicken to the skillet, mix everything well, and let it cook together for an additional 2 minutes, allowing the flavors to meld.

              Garnish: Sprinkle chopped green onions over the chicken before serving.
