1 can (15 oz) black beans, drained and rinsed

1 cup fresh or frozen corn (thawed)

1 medium red bell pepper, finely diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust for heat level)

1 cup cherry tomatoes, quartered

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

In a large mixing bowl, combine the black beans, corn, diced red bell pepper, chopped onion, minced jalapeño, and quartered cherry tomatoes.

    Add the chopped cilantro to the bowl.

      In a small separate bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.

        Pour the dressing over the salsa mixture and gently toss everything together until well combined.
