2 cups cooked chicken, diced

1 cup mixed vegetables (carrots, peas, corn)

1 cup chicken broth

1 cup milk

1/2 cup onion, chopped

1/4 cup flour

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

1 1/2 cups Bisquick mix

3 eggs

Instructions
 

Preheat your oven to 400°F (200°C).

    In a medium pan over medium heat, sauté the chopped onions until they are translucent.

      Stir in the mixed veggies and cook for another 2-3 minutes until slightly tender.

        Add the diced chicken and sprinkle in the garlic powder, dried thyme, salt, and pepper. Stir to combine.

          Pour in the chicken broth and milk, stirring gently until well blended. Let the mixture simmer for about 5 minutes, then remove from heat.

            In a separate bowl, whisk together the Bisquick mix, flour, and eggs until smooth.

              Grease a 9-inch pie dish or oven-safe skillet. Pour the chicken and vegetable mixture into the dish.

                Gently spoon the Bisquick batter on top of the filling, spreading it evenly.

                  Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

                    Allow the pot pie to cool for 5-10 minutes before serving.
