2 lbs beef chuck roast, cut into chunks

2 chiles guajillo, stems and seeds removed

2 chiles ancho, stems and seeds removed

1 onion, quartered

4 cloves garlic, minced

3 cups beef broth

1 tablespoon apple cider vinegar

1 teaspoon ground cumin

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

10 corn tortillas

Chopped cilantro and onions for garnish

Lime wedges for serving

Instructions
 

Prepare the Chile Sauce: In a medium saucepan, add the chiles, onion, and garlic. Cover with water and bring to a boil. Reduce heat and simmer for about 10-15 minutes until the chiles are soft. Drain, then blend with one cup of beef broth until smooth. Set aside.

    Season the Beef: In a large bowl, season the beef chunks with salt, pepper, cumin, and oregano.

      Combine Ingredients: In a slow cooker, add the seasoned beef, blended chile sauce, remaining beef broth, apple cider vinegar, and bay leaf. Stir well to combine.

        Cook: Cover and cook on low for 8 hours or on high for 4 hours until the beef is tender and easy to shred.

          Shred the Beef: Once cooked, remove the beef from the slow cooker and shred it using two forks. Discard any excess fat.

            Prepare Tacos: To serve, warm the corn tortillas in a skillet. Place a generous amount of shredded beef on each tortilla.

              Garnish: Top each taco with chopped cilantro and diced onion.

                Serve: Serve immediately with lime wedges on the side for squeezing over the tacos and a small bowl of the broth (consomé) for dipping.
