1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 teaspoon sugar

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

Zest of 1 lime

¼ cup fresh lemon juice

¼ cup fresh lime juice

1 cup sour cream

1 cup pitted cherries, quartered

½ cup shelled pistachios, roughly chopped

Whipped cream and cherry halves for garnish

Instructions
 

Preheat your oven to 325°F (160°C) and lightly grease a 9-inch springform pan.

    In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press this mixture firmly into the bottom of the springform pan to create a crust. Bake for 10 minutes, then remove and let cool.

      In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar and continue to beat until well combined.

        Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract, lemon zest, lime zest, lemon juice, and lime juice until fully incorporated.

          Gently fold in the sour cream, cherries, and chopped pistachios until evenly distributed throughout the batter.

            Pour the filling onto the cooled crust, smoothing the top with a spatula.

              Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.

                Once cooled, remove the cheesecake from the oven and refrigerate for at least 4 hours, or preferably overnight to set completely.

                  Before serving, whip some cream and spread over the top, garnishing with cherry halves and additional chopped pistachios for a delightful finish.
