2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup sugar

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 large eggs

1/4 cup sour cream

1 cup mixed berry compote (fresh or frozen)

1/4 cup crushed pistachios (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

    In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbly.

      Press the crumb mixture evenly into the bottom of the prepared baking dish to form the crust. Bake for 10 minutes, then remove from the oven and let cool slightly.

        In a large mixing bowl, beat the softened cream cheese and powdered sugar together with an electric mixer until smooth and creamy.

          Add the vanilla extract, followed by the eggs one at a time, mixing well after each addition. Finally, blend in the sour cream until fully incorporated.

            Pour the cream cheese mixture over the cooled crust, spreading it evenly.

              Bake in the preheated oven for 25-30 minutes or until the center is set and slightly jiggly.

                Once done, remove from the oven and allow to cool completely at room temperature. Then refrigerate for at least 2 hours to help it set further.

                  Once chilled and set, cut into squares and plate with a generous spoonful of mixed berry compote on top of each square.

                    Garnish with crushed pistachios for an added crunch and color.
