4 large flour tortillas

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cooked and shredded chicken (or black beans for a vegetarian option)

1/2 cup roasted red peppers, sliced

1/4 cup fresh cilantro, chopped

1 small red onion, thinly sliced

1 avocado, sliced

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

Olive oil or cooking spray for frying

Salsa and sour cream for serving (optional)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded chicken (or black beans), roasted red peppers, cilantro, cumin, paprika, salt, and pepper. Mix until well combined.

    Assemble the Quesadillas: Lay two tortillas on a clean surface. Evenly distribute half of the cheese mixture onto each tortilla. Top with the filling mixture, then sprinkle the remaining cheese on top. Cover with the other two tortillas.

      Cook the Quesadillas: Heat a large skillet over medium heat and add a drizzle of olive oil or spray with cooking spray. Carefully place one quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Repeat with the second quesadilla.

        Slice and Serve: Remove the quesadillas from the skillet and let them rest for a minute. Cut each quesadilla into wedges. Serve warm with avocado slices, salsa, and sour cream on the side.
