1 lb chicken breast, cut into 1-inch cubes

1 ripe pineapple, peeled, cored, and cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1/4 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

Salt and pepper, to taste

Fresh cilantro, for garnish

Bamboo or metal skewers

Instructions
 

Marinate the Chicken: In a bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, and ginger. Add salt and pepper to taste. Add chicken cubes to the marinade, ensuring they are fully coated. Cover and let marinate in the refrigerator for at least 30 minutes or up to 2 hours.

    Prepare Skewers: If using bamboo skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill or grill pan over medium heat.

      Assemble Skewers: Thread the marinated chicken, pineapple, and bell peppers onto the skewers, alternating each ingredient. Pack them tightly but not too tight that they can’t cook properly.

        Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked (internal temperature should reach 165°F) and has nice grill marks.

          Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Garnish with fresh cilantro before serving. Enjoy the tropical flavors on their own or with a side of coconut rice!
