Ingredients
  

1 cup mixed berries (strawberries, blueberries, raspberries)

2 tablespoons sugar (adjust to taste)

1 cup sparkling water or club soda

1/2 cup heavy cream

1 teaspoon vanilla extract

Ice cubes

Fresh mint leaves for garnish

Instructions
 

In a small saucepan, combine the mixed berries and sugar over medium heat. Stir gently and simmer for about 5 minutes, until the berries start to break down and release their juices. Remove from heat and let cool slightly.

    Strain the berry mixture through a fine mesh sieve to remove seeds, pressing down to extract all the juice. You should have about 1/4 cup of berry syrup. Set aside.

      In a medium bowl, whisk together the heavy cream and vanilla extract until it slightly thickens, creating a whipped cream-like texture.

        Fill serving glasses with ice cubes about halfway up.

          Add 2 tablespoons of the berry syrup into each glass.

            Slowly pour sparkling water or club soda over the ice and syrup, filling the glasses to about 3/4 full.

              Using a spoon, gently stir to combine the berry syrup with the sparkling water.

                Top each drink with a generous dollop of the whipped cream mixture.

                  Garnish with fresh mint leaves and a few whole berries on top for an extra pop of color.
