1.5 lbs beef sirloin, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

2 cups beef broth (low sodium)

1 tablespoon Worcestershire sauce

2 tablespoons soy sauce

1 teaspoon dried thyme

1 teaspoon dried oregano

2 tablespoons cornstarch mixed with 3 tablespoons water (slurry for thickening)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet or Dutch oven, heat olive oil over medium-high heat. Season the beef tips with salt and pepper. Add them to the skillet in batches, searing each piece for about 3-4 minutes until browned on all sides. Remove the beef from the skillet and set aside.

    Cook Onions and Garlic: In the same skillet, add the chopped onion and sauté until softened (about 5 minutes). Add minced garlic and cook for another minute until fragrant.

      Add Mushrooms: Stir in the sliced mushrooms and cook until they release their moisture and begin to brown (approximately 5-7 minutes).

        Combine Ingredients: Return the seared beef to the skillet with the mushrooms and onions. Pour in the beef broth, Worcestershire sauce, soy sauce, thyme, and oregano. Stir well to combine.

          Simmer: Bring the mixture to a gentle simmer. Reduce the heat to low, cover, and let it simmer for about 30 minutes, allowing the flavors to meld together.

            Thicken the Gravy: After 30 minutes, gradually stir in the cornstarch slurry, mixing well. Continue to cook for an additional 5-10 minutes, until the gravy thickens to your desired consistency. Adjust seasoning with salt and pepper as needed.

              Serve: Once the gravy is thickened and flavorful, remove from heat. Garnish with freshly chopped parsley before serving.
