2 lbs beef stew meat, cut into 1-inch cubes

1 cup beef broth

1 cup mushrooms, sliced

1 onion, finely chopped

3 cloves garlic, minced

1/4 cup soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon paprika

1 teaspoon dried thyme

2 tablespoons flour

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Cooked rice or mashed potatoes for serving

Instructions
 

Prepare the Beef: Season the beef cubes with salt, pepper, and paprika. Set aside.

    Sear the Beef (Stove Top Method):

      - In a large skillet or pot, heat olive oil over medium-high heat.

        - Add the beef cubes in batches, searing them on all sides until browned (about 5-7 minutes). Remove beef and transfer to a plate.

          Sauté Aromatics:

            - In the same skillet, add chopped onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.

              - Add mushrooms and cook for another 2-3 minutes until softened.

                Create the Gravy:

                  - Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 1 minute.

                    - Gradually add the beef broth, stirring constantly to avoid lumps. Bring to a simmer.

                      Combine Ingredients:

                        - Return the seared beef to the pot.

                          - Stir in the soy sauce, Worcestershire sauce, and thyme. Bring the mixture to a gentle boil.

                            Simmer:

                              - Reduce the heat to low, cover, and let it simmer for about 30-35 minutes, or until the beef is tender, stirring occasionally.

                                Crock Pot Method:

                                  Sear the Beef (Optional): Follow steps 1 and 2 above if you want enhanced flavor, but you can also skip this and directly add the beef to the crock pot.

                                    Combine Ingredients in Crock Pot:

                                      - Add all ingredients (including seared beef or raw beef) into the crock pot.

                                        - Stir to combine and ensure the beef is submerged in the gravy mixture.

                                          Cook:

                                            - Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.

                                              Serve:

                                                - Once cooked, taste and adjust seasoning if necessary. Serve over cooked rice or mashed potatoes and garnish with fresh parsley if desired.
