1.5 lbs beef sirloin or tenderloin, cut into bite-sized cubes

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups beef broth

1 cup mushrooms, sliced (optional)

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

2 tablespoons all-purpose flour

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

1 cup sour cream (optional for a creamy version)

Cooked egg noodles or rice (for serving)

Instructions
 

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Once the oil is hot, add the beef in batches (do not overcrowd) and sear until browned on all sides. Remove the beef from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute until fragrant.

      Deglaze the Pan: If you're using mushrooms, add them to the skillet and cook for 2-3 minutes until they're softened. Then, sprinkle the flour over the mixture, stirring constantly for about 1 minute to remove the raw flavor.

        Make the Gravy: Slowly pour in the beef broth while stirring to deglaze the pan, scraping up any brown bits from the bottom. Add Worcestershire sauce and dried thyme. Bring the mixture to a simmer.
