Ingredients

2 beef tenderloin steaks (about 6-8 oz each)

Salt and black pepper to taste

2 tablespoons olive oil

1 cup mushrooms, sliced (cremini or button)

2 cloves garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

1 tablespoon soy sauce

2 tablespoons chives, chopped (for garnish)

Instructions

Preparation of Steak: Season both sides of the beef tenderloin steaks generously with salt and black pepper. Allow them to sit at room temperature for about 15 minutes.

Searing the Steaks: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the tenderloin steaks. Cook for 4-5 minutes on each side for medium-rare (or until your desired doneness). Once cooked, remove the steaks from the skillet and cover them loosely with aluminum foil to rest.

Cooking the Mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté for about 5 minutes until they are browned and have released their moisture.

Adding Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

Creating the Sauce: Reduce the heat to medium. Pour in the heavy cream and stir in the Dijon mustard, thyme leaves, and soy sauce. Allow the sauce to simmer for 5-7 minutes until it thickens slightly, stirring occasionally. Taste and adjust seasoning with salt and pepper if needed.

Combining Steaks with Sauce: Return the rested beef tenderloins back to the skillet, spooning the creamy mushroom sauce over them. Cook together for an additional 2 minutes to heat through.

Serve: Plate the beef tenderloin, generously spooning more of the creamy mushroom sauce over the top. Sprinkle with freshly chopped chives for color and garnish.

                  - Presentation Tips: Serve the beef tenderloin on warm plates alongside a simple side of roasted vegetables or creamy mashed potatoes for a complete meal. Add a sprig of fresh thyme on top for an elegant touch.
