1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced (cremini or button)

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup beef broth (low sodium)

1 cup sour cream

1 teaspoon paprika

Salt and pepper, to taste

12 oz egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Egg Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the thinly sliced beef, seasoning it with salt and pepper. Sear the beef for about 3-4 minutes, until browned. Remove the beef from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and sliced mushrooms; cook for an additional 5 minutes or until the mushrooms are soft and golden.

        Create the Sauce: Lower the heat and stir in the Worcestershire sauce, Dijon mustard, and paprika. Pour in the beef broth, stirring to combine. Allow the sauce to simmer for about 5 minutes, letting it reduce slightly.

          Finish with Sour Cream: Remove the skillet from heat and stir in the sour cream until smooth. Add the cooked beef back into the skillet and allow everything to warm through for another 2-3 minutes. Adjust seasoning with salt and pepper, if necessary.

            Serve: Plate the cooked egg noodles and spoon the beef stroganoff mixture on top. Garnish with freshly chopped parsley for a burst of flavor and color.
