1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

8 oz (225g) cremini mushrooms, sliced

1 cup beef broth (low sodium)

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

2 tablespoons all-purpose flour

1 teaspoon paprika

Salt and pepper to taste

8 oz (225g) egg noodles (or your favorite pasta)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Season with salt and pepper. Remove beef from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add chopped onions and minced garlic, sautéing until the onions are translucent, about 2-3 minutes.

        Add Mushrooms: Add the sliced mushrooms to the skillet; cook until softened and browned, about 5-7 minutes.

          Make the Sauce: Sprinkle the flour over the mushrooms and stir to coat. Cook for an additional minute. Slowly stir in the beef broth, Worcestershire sauce, and Dijon mustard, scraping up any browned bits from the bottom of the skillet.

            Combine Ingredients: Return the cooked beef to the skillet. Stir in the sour cream and paprika,Reducing heat to low. Simmer the mixture for about 5 minutes until heated through. Adjust seasoning with salt and pepper to taste.

              Serve: Spoon the beef stroganoff over prepared egg noodles. Garnish with chopped parsley.
