Beef Stew with Dumplings

2 lbs beef chuck, cut into 1-inch cubes

4 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

4 carrots, sliced

3 stalks celery, chopped

4 medium potatoes, diced

4 cups beef broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup frozen peas

For the Dumplings:

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

⅔ cup milk

¼ cup unsalted butter, melted

2 tablespoons fresh parsley, chopped

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches and brown them on all sides. Remove the beef and set aside.

    In the same pot, add the diced onions and sauté until soft and translucent, about 5 minutes. Add the garlic and cook for another 1-2 minutes.

      Next, add the carrots, celery, and potatoes, and cook for an additional 5 minutes.

        Pour in the beef broth, and stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Bring the mixture to a simmer.

          Return the browned beef to the pot, cover, and let it simmer on low heat for 1.5 to 2 hours, until the beef is tender.

            About 15 minutes before the stew is done, mix the dumpling batter. In a bowl, whisk together the flour, baking powder, and salt. Add milk and melted butter, stirring until just combined. Fold in the chopped parsley.

              Drop spoonfuls of the dumpling mix over the stew. Cover the pot and let the dumplings steam for about 10-15 minutes, until they are fluffy and cooked through.

                Stir in the frozen peas and let them heat through before serving. Adjust seasoning as needed.
