2 lbs beef chuck, cut into 1-inch cubes

4 tablespoons olive oil

2 large onions, sliced

4 cloves garlic, minced

2 carrots, diced

3 tablespoons brown sugar

4 cups beef broth

2 tablespoons apple cider vinegar

2 tablespoons Dijon mustard

2 bay leaves

1 teaspoon dried thyme

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add half of the beef cubes and sear until browned on all sides, about 5-7 minutes. Remove beef and repeat with remaining beef, adding more oil if necessary. Set browned beef aside.

    Sauté the Vegetables: In the same pot, add sliced onions and diced carrots, cooking until the onions are translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Caramelize the Onions: Sprinkle brown sugar over the onions and carrots. Continue to sauté for an additional 3-4 minutes until the sugar has caramelized slightly.

        Combine Ingredients: Return the browned beef to the pot. Add beef broth, apple cider vinegar, Dijon mustard, bay leaves, thyme, salt, and pepper. Stir well to combine all ingredients.

          Simmer the Stew: Bring the mixture to a gentle boil, then reduce heat to low. Cover and let the stew simmer for about 2-2.5 hours, or until the beef is tender, stirring occasionally.

            Adjust Seasoning: Taste the stew and adjust seasoning with more salt, pepper, or vinegar if needed.

              Serve: Remove bay leaves before serving. Ladle the stew into bowls and garnish with freshly chopped parsley.
