2 pounds beef chuck, cut into 1-inch cubes

4 slices of bacon, chopped

2 tablespoons all-purpose flour

1 large onion, diced

3 carrots, sliced

3 cloves garlic, minced

2 cups beef broth

2 cups mushrooms, halved

2 tablespoons tomato paste

1 teaspoon dried thyme

2 bay leaves

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large heavy-bottomed pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Increase the heat to medium-high and add the beef cubes to the pot, searing them on all sides until browned. Remove the beef and set aside with the bacon.

      In the same pot, add the olive oil, then the diced onion and sliced carrots. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute.

        Sprinkle the flour over the vegetables and stir well to combine. Cook for another 2 minutes to toast the flour lightly.

          Return the beef and bacon to the pot. Stir in the tomato paste, beef broth, dried thyme, bay leaves, salt, and pepper. Bring the mixture to a simmer.

            Cover the pot and reduce the heat to low. Let it cook gently for about 2 hours, or until the beef is tender.

              In the final 30 minutes of cooking, add the halved mushrooms to the pot, stirring them in gently.

                Once cooked, remove the bay leaves and adjust seasoning if necessary.

                  Serve the Beef Bourguignon hot, garnished with fresh parsley.
