Ingredients
  

1 lb beef stew meat, cut into 1-inch cubes

1 tablespoon olive oil

1 medium onion, diced

2 garlic cloves, minced

2 carrots, sliced

2 stalks celery, diced

1 cup pearl barley

6 cups beef broth

2 teaspoons dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

2 cups fresh spinach (optional)

Fresh parsley for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef and set aside.

    In the same pot, add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are tender, about 5 minutes.

      Stir in the pearl barley and cook for another 2 minutes, allowing the barley to toast slightly.

        Add the browned beef back into the pot along with the beef broth, thyme, oregano, bay leaf, and season with salt and pepper. Bring the mixture to a boil.

          Reduce the heat to low, cover, and let it simmer for about 1 hour, or until the barley is tender and the beef is cooked through, stirring occasionally.

            If using, stir in the fresh spinach during the last 5 minutes of cooking until wilted.

              Remove the bay leaf, taste, and adjust seasoning if required. Serve hot, garnished with fresh parsley.
