Ingredients

1 medium-sized bangus (milkfish), cleaned and scaled

1/4 cup olive oil

1 onion, sliced thin

5 cloves garlic, minced

2-3 Thai chili peppers, whole (adjust to taste)

1 bay leaf

1/2 cup soy sauce

1/4 cup vinegar (cane or white)

1/2 tsp black pepper

1/4 cup water

1 tbsp sugar (optional, to taste)

Chopped fresh parsley or cilantro for garnish

Instructions

Prepare the Bangus: Start by cutting the bangus into fillets or small chunks, depending on your preference for serving. Pat them dry with a paper towel.

Heat Oil: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they become translucent and fragrant.

Add Garlic and Chilies: Stir in the minced garlic and Thai chili peppers, cooking for 1-2 minutes until the garlic is lightly golden and aromatic.

Flavor Base: Add the bay leaf, soy sauce, vinegar, black pepper, and water. If you like a hint of sweetness, add sugar. Stir well to combine the ingredients.

Simmer the Bangus: Carefully add the bangus pieces to the skillet, ensuring they are evenly coated with the sauce. Allow the mixture to simmer on low heat for about 30-40 minutes, turning the fish halfway through to ensure even cooking.

Reduce Sauce: If the sauce seems too watery at the end of the cooking time, you can remove the fish and let the sauce simmer for an additional 5-10 minutes until it thickens to your liking.

Serve: Once cooked, transfer the bangus to a serving dish, spooning the sauce over the top. Garnish with chopped parsley or cilantro for a vibrant touch.

Enjoy: Serve the Bangus Spanish Sardines with steamed rice, pickled vegetables, or crusty bread to soak up the delicious sauce.
