4 pork sausages (or your choice of sausages)

2 pounds Yukon Gold potatoes, peeled and cubed

1/2 cup heavy cream

1/4 cup unsalted butter

Salt to taste

Pepper to taste

2 large onions, thinly sliced

2 tablespoons olive oil

1 tablespoon all-purpose flour

2 cups beef or vegetable broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Cook the Sausages: In a large skillet over medium heat, add the olive oil. Once hot, add the sausages. Cook for about 12-15 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and keep warm.

    Prepare the Mashed Potatoes: While the sausages are cooking, place the cubed potatoes in a pot of cold salted water. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until fork-tender. Drain the potatoes and return them to the pot.

      Mash the Potatoes: Add the heavy cream, butter, salt, and pepper to the drained potatoes. Mash until smooth and creamy. (For an extra touch, you can use a hand mixer for ultra-creamy potatoes). Keep warm.
