6 pork sausages (your choice of flavor)

4 medium potatoes, peeled and quartered

1 cup milk

4 tablespoons butter

Salt and pepper to taste

1 tablespoon olive oil

1 onion, thinly sliced

1 cup beef or vegetable stock

1 tablespoon Dijon mustard

Fresh parsley for garnish

Prepare the Mash: In a large pot, bring salted water to a boil and add the quartered potatoes. Boil for 15-20 minutes or until tender.

    While the potatoes are cooking, heat olive oil in a skillet over medium heat. Add sliced onions and sauté until golden brown, about 8-10 minutes.

      Add the sausages to the skillet with the onions, cooking for 12-15 minutes until browned and cooked through, turning occasionally.

        In a small saucepan, combine the beef or vegetable stock with Dijon mustard and heat through. Add salt and pepper to taste to create a simple gravy.

          Once the potatoes are done, drain them and return them to the pot. Add milk and butter, then mash until smooth. Season with salt and pepper.

            Serve the sausages on a bed of creamy mashed potatoes, drizzling the mustard gravy over the top.
