4 pork sausages (your choice of spice level)

4 large russet potatoes, peeled and cubed

1/2 cup milk

4 tablespoons unsalted butter

1 tablespoon olive oil

1 large onion, thinly sliced

1 cup beef or vegetable broth

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley for garnish

Prepare the Mashed Potatoes: Place the peeled and cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook for 15-20 minutes until the potatoes are fork-tender. Drain and return to the pot.

    Mash the Potatoes: Add the milk and butter to the drained potatoes. Use a potato masher to mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

      Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides, about 8-10 minutes. Remove from the skillet and set aside.

        Make the Onion Gravy: In the same skillet, add the sliced onion. Sauté until caramelized and golden, about 5-7 minutes. Add the beef or vegetable broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan. Let it simmer for 5 minutes to thicken slightly. If desired, add a dash of pepper for additional flavor.

          Combine and Serve: Nestle the sausages back into the skillet with the onion gravy. Let them cook together for an additional 2-3 minutes.

            Plate the Dish: Serve a generous scoop of mashed potatoes on a plate, topped with the sausages and spoonfuls of onion gravy.
