4 spicy pork sausages (or your choice of sausages)

1 pound (450g) russet potatoes, peeled and cubed

1/2 cup heavy cream

4 tablespoons unsalted butter

1/2 cup milk

1 medium onion, finely sliced

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon thyme

Salt and black pepper to taste

Olive oil for frying

Fresh chives, chopped, for garnish

Cook the Sausages: Preheat a large skillet over medium heat. Add a drizzle of olive oil and place the sausages in the skillet. Cook them for about 10-12 minutes, turning frequently until they are browned and cooked through. Once cooked, remove from skillet and set aside.

    Prepare the Mash: While the sausages are cooking, place the cubed potatoes in a large pot and cover them with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are tender. Drain well.

      Make Creamy Mash: In the same pot (off the heat), add the butter, heavy cream, milk, Dijon mustard, and season with salt and pepper. Mash the potatoes using a potato masher until smooth and creamy. Adjust cream and butter for desired consistency. Stir in fresh chives for added flavor. Set aside.

        Sauté the Onions: In the same skillet used for the sausages, add the sliced onions. Cook over low heat, stirring frequently, until they become golden and caramelized, about 10 minutes. Add minced garlic and thyme, and cook for an additional 2-3 minutes. Season with salt and pepper to taste.

          Assemble the Dish: Plate the mashed potatoes as a base. Top with the sausages, then spoon the caramelized onions over everything.

            Serve: Garnish with chopped chives for a fresh touch and serve immediately.
