1 pound large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon cayenne pepper

Salt and pepper to taste

Oil for frying (vegetable or canola)

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

2 green onions, sliced thin for garnish

Sesame seeds for garnish

Instructions
 

In a bowl, soak the peeled and deveined shrimp in buttermilk for about 30 minutes to tenderize and add flavor.

    While the shrimp is soaking, prepare the coating by mixing flour, garlic powder, onion powder, paprika, cayenne, salt, and pepper in a separate shallow dish.

      Heat oil in a deep skillet or frying pan over medium-high heat. The oil should be around 350°F (180°C) for frying.

        Remove each shrimp from the buttermilk, allowing excess to drip off, and then dredge it in the seasoned flour, shaking off the excess.

          Carefully place the coated shrimp in the hot oil in batches, avoiding overcrowding the pan. Fry until golden brown and cooked through, about 2-3 minutes on each side.

            Once cooked, transfer the shrimp to a paper towel-lined plate to absorb any excess oil.

              In a separate bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce. Adjust the sriracha to control the spiciness.

                Toss the warm, crispy shrimp in the Bang Bang sauce until evenly coated.

                  Plate the shrimp and garnish with sliced green onions and sesame seeds for an attractive finish.
