1 pound shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup vegetable oil (for frying)

For Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 tablespoon honey

1 teaspoon lime juice

1 green onion, thinly sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Shrimp: In a bowl, soak the peeled and deveined shrimp in buttermilk for at least 30 minutes. This helps tenderize the shrimp.

    Prepare the Coating: In another bowl, mix the flour, cornstarch, paprika, garlic powder, cayenne pepper, salt, and pepper until well combined.

      Heat the Oil: In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

        Coat the Shrimp: Remove the shrimp from the buttermilk and let any excess drip off. Dredge each shrimp in the flour mixture, ensuring they are well coated.

          Fry the Shrimp: Working in batches, fry the coated shrimp in the hot oil for about 2-3 minutes or until they turn golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

            Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth and creamy.

              Toss the Shrimp: In a big mixing bowl, gently toss the crispy shrimp in the Bang Bang sauce until well coated.
