For the Cupcakes:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup ripe bananas, mashed (about 2 bananas)

½ cup buttermilk

For the Caramelized Banana Filling:

2 ripe bananas, sliced

2 tbsp butter

¼ cup brown sugar

1 tsp vanilla extract

For the Pudding Frosting:

1 cup heavy cream

1 cup instant vanilla pudding mix

2 cups milk

½ tsp vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

    Make the Cupcake Batter: In a bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time and add in the vanilla extract. Mix in the mashed bananas. Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk, mixing until just combined.

      Bake the Cupcakes: Fill the cupcake liners about 2/3 full with the batter. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool completely on a wire rack.

        Prepare the Caramelized Banana Filling: In a skillet, melt the butter over medium heat. Add sliced bananas and brown sugar, cooking until the bananas are caramelized and softened, about 2-3 minutes. Remove from heat and stir in the vanilla extract. Let it cool slightly.

          Make the Pudding Frosting: In a medium bowl, whisk together the instant vanilla pudding mix and milk until it thickens (about 2 minutes). In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the pudding mixture.

            Assemble the Cupcakes: Once the cupcakes are cool, use a small knife or cupcake corer to cut a circle from the center of each cupcake, removing the top. Fill each cupcake with the caramelized banana filling, then place the tops back on.
