Ingredients

1 cup ripe bananas (mashed, about 2 medium)

1/2 cup unsalted butter (softened)

1/2 cup brown sugar (packed)

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup vanilla wafer cookies (crushed)

1/2 cup mini marshmallows

1/2 teaspoon ground cinnamon (optional)

Extra mini marshmallows and crushed vanilla wafers for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Add in the mashed bananas, egg, and vanilla extract, mixing until fully combined.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon (if using).

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

Add Crunch & Creaminess: Gently fold in the crushed vanilla wafer cookies and mini marshmallows until evenly distributed throughout the cookie dough.

Scoop & Shape: Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly if desired.

Add Toppings: Sprinkle a few extra mini marshmallows and crushed vanilla wafers on top of each cookie for added texture and presentation.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are golden and the centers are set but still soft. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Serve: Enjoy your Banana Pudding Cookies warm or at room temperature. These cookies are perfect for dessert or a sweet snack!
