Ingredients

2 ripe bananas, mashed

8 oz (225g) cream cheese, softened

1 cup granulated sugar

1 cup heavy cream

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 tablespoon sugar (for crust)

Sliced bananas and whipped cream for topping

Instructions

Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and 1 tablespoon sugar. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake at 350°F (175°C) for 10-12 minutes. Remove from the oven and let cool.

Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in the granulated sugar and continue mixing until well combined.

Incorporate Bananas: Add the mashed bananas, vanilla extract, and lemon juice to the cream cheese mixture. Beat until thoroughly combined and smooth.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the banana cream cheese mixture. Be careful not to deflate the whipped cream.

Combine and Chill: Pour the filling over the cooled crust in the springform pan. Spread it out evenly and smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Serve: Once chilled and set, carefully remove the sides of the springform pan. Decorate the top with sliced bananas and dollops of whipped cream.
