Ingredients
  

1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons balsamic vinegar

2 tablespoons honey (or maple syrup for a vegan option)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Optional: 1 tablespoon sesame seeds for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, whisk together the balsamic vinegar, honey, olive oil, garlic powder, fresh thyme, salt, and pepper until well combined.

      Add the baby carrots to the bowl and toss them in the balsamic mixture until they are fully coated.

        Line a baking sheet with parchment paper for easier cleanup. Spread the coated carrots in a single layer on the sheet.

          Roast in the preheated oven for about 25-30 minutes, turning the carrots halfway through, or until they are tender and slightly caramelized.

            Once roasted, remove from the oven and sprinkle with sesame seeds if desired before serving.

              Serve warm as a side dish or enjoy them on a mixed greens salad!
