Ingredients

4 bone-in, skin-on chicken thighs

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil, for garnish

Optional: 1 tablespoon Dijon mustard for added depth

Instructions

Prepare the Marinade: In a mixing bowl, combine balsamic vinegar, honey, olive oil, minced garlic, thyme, oregano, salt, pepper, and Dijon mustard (if using). Whisk until well-blended.

Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated. Seal the bag or cover the dish and place it in the refrigerator to marinate for at least 1 hour, preferably overnight for maximum flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Sear the Chicken: Heat a large oven-safe skillet (cast iron works great) over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later. Season the chicken thighs with salt and pepper. Place them skin-side down in the hot skillet. Cook for about 5-7 minutes until the skin is golden and crispy.

Add the Marinade: Flip the chicken thighs over and pour the reserved marinade into the skillet, ensuring it surrounds the chicken.

Bake: Transfer the skillet to the preheated oven. Bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the glaze has thickened.

Broil for Finish (Optional): For a caramelized finish, turn on the broiler for an additional 2-3 minutes at the end of cooking, keeping a close watch to prevent burning.

Serve: Remove the skillet from the oven and let the chicken rest for 5 minutes. Drizzle any leftover glaze over the chicken and garnish with fresh basil before serving.
