3 medium zucchinis, cut into sticks

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

2 large eggs

¼ cup all-purpose flour

Olive oil spray

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Set up a breading station: In one shallow bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

      Dip each zucchini stick first into the flour, shaking off the excess, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to ensure they are evenly coated.
