1 pound shrimp, peeled and deveined

2 tablespoons cream cheese, softened

2 tablespoons mayonnaise

1 tablespoon fresh chives, finely chopped

1 tablespoon fresh cilantro, finely chopped

1 clove garlic, minced

1 teaspoon lemon juice

½ teaspoon salt

½ teaspoon black pepper

8 slices of whole grain bread

Olive oil for drizzling

¼ cup breadcrumbs (for topping)

Optional: Sriracha or chili sauce for serving

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    In a food processor, combine the shrimp, cream cheese, mayonnaise, chives, cilantro, garlic, lemon juice, salt, and pepper. Pulse until the shrimp is finely chopped and the mixture is well blended, but still has some texture.

      Take a slice of whole grain bread and spread a generous layer of the shrimp mixture on top. Repeat this for each slice of bread until all the mixture is used.

        Place the shrimp-covered bread slices on the prepared baking sheet.
