2 salmon fillets

1 bunch of asparagus, trimmed

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

1 teaspoon dried dill

1/2 teaspoon salt

1/4 teaspoon black pepper

Lemon slices for garnish

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    Lay a large piece of aluminum foil on a baking sheet, ensuring there is enough room to fold the foil around the salmon and asparagus.

      Place the asparagus in the center of the foil. Drizzle 1 tablespoon of olive oil over the asparagus and sprinkle with half of the minced garlic, half of the lemon zest, salt, and pepper.

        On top of the asparagus, place the salmon fillets, skin side down. Drizzle with the remaining olive oil and minced garlic.

          Squeeze the fresh lemon juice over the salmon and asparagus, then sprinkle the dried dill and the rest of the lemon zest.

            Use the foil to create a sealed packet, folding the edges over to completely enclose the salmon and asparagus. This will help steam the fish and veggies.

              Place the foil packet in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Carefully open the foil packet (watch out for steam) and transfer the salmon and asparagus to a serving plate.

                  Garnish with fresh lemon slices and chopped parsley before serving.
