2 medium apples, peeled, cored, and diced

1 ½ cups all-purpose flour

½ cup brown sugar

1 tablespoon baking powder

½ teaspoon cinnamon

¼ teaspoonnutmeg

½ cup almond milk (or any milk of your choice)

1 large egg

1 teaspoon vanilla extract

2 tablespoons melted coconut oil

½ cup powdered sugar (for glaze)

2 tablespoons apple cider (for glaze)

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.

      In another bowl, combine the almond milk, egg, vanilla extract, and melted coconut oil. Mix until well combined.

        Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.

          Fold in the diced apples until they are evenly distributed throughout the batter.

            Using a spoon or a scoop, drop spoonfuls of the fritter batter onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake in the preheated oven for about 18-20 minutes, or until the fritters are golden brown and cooked through.

                While the fritters are baking, prepare the glaze by whisking together the powdered sugar and apple cider in a small bowl until smooth.

                  Once the fritters are done baking, remove them from the oven and let them cool for a few minutes on a wire rack.
